What working space should l use?

The Short Answer:
A wide one.

The Long Explanation:
You should capture and edit your files in a wide-gamut working space to obtain the widest possible range of colors.

If your digital camera lets you, choose AdobeRGB over sRGB.

If you use RAW, use ProPhoto RGB--it's even better than AdobeRGB.

If you are scanning, use Joseph Holmes' Ekta Space PS 5.
